If you aren’t already growing this enticing crop in your garden, you really should be! Evergreen bunching onions are a cinch to grow, strong and enduring, and once established, they can supply a sharp and delicious punch of flavor to your cooking, year after year. Also known as Welsh onions, green onions, Japanese bunching onions, spring onions, and scallions, these are perennial non-bulbing alliums that produce yummy green stems and tiny white roots. In addition to being a tasty inclusion in all manner of cuisine, it also has many uses in Chinese medicine.


GROWING INSTRUCTIONS
(Zones: 3-12) Since most onions take a few months to mature from seed, gardeners with a short growing season may want to start their green onion seeds indoors. Plant the seeds 1/4" deep in a flat 2-3 months before the last frost date. Keep the soil moist and at room and at room temperature. When the tops begin to flop over, cut them off to 3" to focus the growing on the roots. Four weeks before the last frost or when the soil reaches at least 50°, transplant the seedlings 3" apart in rows in 12" apart. For direct sowing, sow 3 seed per inch 1/4" deep in light, rich soil and full sun. Thin the seedlings 3" apart. Thinned onions can be transplanted or used for fresh eating. Onions need moisture especially in their first several weeks of growth.
